Recipe suitable for a titanium pan
Ingredients
(4 servings):
2 stalks of leek
4 sweet potatoes
1 carrot
10 brussels sprouts
5 garlic cloves
20 g fresh thyme
30 g sugar
30 g butter
125 g fresh goat cheese
salt & pepper
1 pack of puff pastry
Instructions:
In this recipe, the titanium pan is used both to prepare the caramel and as a baking dish.
1. Preheat the oven to 180°C (356°F).
2. Cut the leek into 2 cm-wide pieces. Peel the sweet potatoes and cut
them into evenly sized pieces. Roughly chop the garlic and strip the thyme
leaves from the stems.
3. Prepare the caramel in the pan: Melt the sugar over medium heat until
it turns golden brown. Gradually stir in the butter until fully melted and the
mixture thickens. Be careful not to burn the caramel. Remove from heat.
4. Evenly distribute the prepared vegetables over the caramel in the
pan. Add the garlic, thyme leaves, and pieces of fresh goat cheese between the
vegetables. Season with salt and pepper. Finally, cover everything with the puff
pastry and gently press it down.
5. Place the pan in the preheated oven and bake for 30 minutes at
180°C.
6. After baking, carefully flip the tarte Tatin onto a large plate and
serve warm.
